Casino Pauma Friday held the grand opening Friday for Lindo Valle Mexican Grill.

The menu and concept were created by chefs Leticia Nunez and Brian Diumenti.The newest addition joins Casino Pauma's other restaurant roster Café and Casino Pauma Deli & Pizzeria.

Lindo Valle's dishes have been carefully selected by Chef Leticia and inspired by Oaxaca, Mexico's regional flavors.Everything is freshly-made in house with native ingredients like avocado leaves, Mexican pepper leaf, and Epazote.

Fairway Cafe - This restaurant serves breakfast, lunch, and dinner. A children's menu is available. Noodle Bar - This theme restaurant specializes in Asian cuisine and serves lunch and dinner.

The menu items feature specialty dishes like, Braised Short Rib Mole Negro, Pork Belly Pintxo, fresh Ocean Sea Bass, fresh homemade guacamole and more.Mexico's best coastal dishes are also well-represented on the menu with Pescado Blanco and Lump Crab & Jumbo Shrimp Empanadas in achiote/citrus marinade.

There are vegan and vegetarian plates as well.

Chef Leticia has always had a love for food. While growing up in Mexico, her family was very particular about food with an emphasis on its proper selection, handling, and preparation.By age eight, she made her first mole, following a very intricate family recipe.Her grandmother was militant with regard to technique and presentation even though she was only cooking for her loved ones.Everyone in Chef Leticia's family has contributed to her culinary repertoire and inherent passion for food.

During her early years she worked for many chefs who have since become world renowned, including Alice Waters at her Chez Panisse Restaurant in Berkley, California, Thomas Keller of The French Laundry and Annie Roberts at the Robert Mondavi Winery.At that time, when her career was just beginning, she was forming her own skills and ideals about food and how she wanted to make her mark.This was not easy since many of these chefs were focused on how they wanted the food prepared; but it provided a great foundation for Chef Leticia to base her passion and personal skills.

While working with Chef Bayless, her passion grew and the love and respect for food that she learned as a child in Mexico was reignited.It is one of the reasons that Mexican food is where she shares her heart and soul with those who enjoy her creations.It is where she finds life!

Brian Diumenti, executive chef of culinary business LLC, has been a chef for over 30 years.His background includes developing concepts for celebrity chefs, holding long term Executive Chef positions at resorts on the Las Vegas strip, and has established 40+ restaurants/concepts from quick casual to steakhouses during his career.His most recent project was opening Soboba Casino Resort as the executive chef.There he implemented his recipes and menu items into the fine dining, Mason Grill, Café, and all of the quick service restaurants.

Lindo Valle's bar will feature an array of premium and super premium Tequilas to enjoy straight up, in flights, or in your favorite margarita or specialty craft cocktail.

Lindo Valle will be open Sunday – Tuesday, 4 p.m. to 10 p.m. and Friday and Saturday, 4 p.m. to 11 p.m.It will be closed on Wednesday and Thursday.

Operating 24 hours a day, Casino Pauma and its restaurants continue to adhere to the most stringent standards for a safer environment during the COVID-19 pandemic.It was one of the first casinos in the region to voluntarily close and one of the last to re-open.
